Heart Healthy Ingredients:

  • 8 oz coconut milk
  • 2 oz creme fraiche or heavy cream
  • 2 c. of vegetable broth
  • 1 medium onion, diced
  • 2 clove garlic, chopped
  • 1 T. ginger, chopped
  • 1 T. lemongrass, chopped
  • 2 lime leaves, whole
  • 2 T. chives, diced
  • 1 twig cilantro, with leaves chopped
  • Salt and Pepper (to taste)
  • Pinch of nutmeg (optional)
  • Swirl of tabasco sauce (optional)
  • Steamed rice

Directions

In a pot heat over medium heat, sweat onions, garlic, lemongrass, ginger and lime leaves, and stir for 1 minute only. Then, add coconut milk, and stir for 2 minutes. Next, add 1 ounce of cream. Stir and do not let it burn to the bottom of pot.

Add the one twig of cilantro, then nutmeg and broth. Bring mixture to a boil and let simmer for 5-8 minutes, stirring frequently.  Season with salt and pepper to taste.  Add remaining ounce of cream and stir.  Strain for a smooth texture, if prefer.

Spoon into a bowl. Sprinkle with chopped cilantro leaves and a swirl of tabasco sauce. Serve with steamed rice.
